Blue cheese produced with whole pasteurized cow's milk.

Its cylindrical shape weighs approximately 6/7 kg, the paste is white and compact, featuring green-blue streaks.

 

The molds present inside are due to the blue-veining process, which involves adding Penicillium genus inoculum to the milk; these are activated by air during the aging period by piercing the wheels with special needles.
