CASOLET CLASSICO
It is undoubtedly the typical cheese of Val di Sole, made with pasteurized milk and aged for no more than 30 days. Its characteristic is that it melts in the mouth, with a soft paste, almost no eyes, and a sweet and delicate taste of fresh butter and cream.
CASOLET ALL'ERBA CIPOLLINA
Cheese produced with pasteurized milk. Straw-colored with speckles, soft paste with absent or light eyes. Flavored with chives to enrich the delicate taste of natural Casolet.
Short aging, from 20 to 30 days. Casolet all'Erba Cipollina is ideal for a different kind of appetizer!
CASOLET AL PEPERONCINO
Raw paste cheese made with pasteurized milk. Flavored with pieces of chili pepper. Short aging from 10 days to 2 months. Straw-colored with speckles, uniform consistency, soft and tender structure. Small sparse eyes.
CASOLET AL CUMINO
Cheese made with pasteurized milk and the addition of caraway seeds to the curd.
The flavored casolet most linked to the territory is certainly the one with cumin. The soft Casolet paste is enriched with these small oval-shaped brown seeds often used, as per tradition, in our cuisine.
